Crustless Pumpkin Pie (00078)

3 eggs
¾ cup honey
½ tsp ginger
½ tsp nutmeg
½ tsp cinnamon
½ tsp salt
1 ¾ cups pumpkin
1 cup evaporated milk

Beat eggs lightly, add honey, spices, salt and pumpkin, and mix well.
Add evaporated milk.
Pour into a greased deep 9" pie pan.
Bake at 325° for 1 hour, or until knife blade comes out clean.
Cool before cutting.
Cut into wedges and serve with honey sweetened whipped cream.
