Honey and Nut Custards (00072)

2 eggs
1 oz caster sugar
½ pint milk
2 oz flaked almonds
2 tbsp liquid honey

Beat the eggs in a basin and stir in the sugar.
Warm the milk and add to the basin.
Put the basin over a pan of gently simmering water.
Stir until the mixture thickens and will coat the back of a wooden spoon.
Pour the mixture into two glasses and cool.

Mix 2 oz flaked almonds with 2 tbsp liquid honey and spoon on top of the cooled mixture.
